Thin & Soft Crêpes

While pregnant with my 3rd child, all I craved was crêpes. So I got very good at making them quick and yummy!

 

Here's the recipe I used:

Makes 10-12 crêpes.

Servings: 4


Crêpes:

1 and 1/4 c pancake mix

1 c water

2 eggs, beaten

Butter or spray vegetable oil


Filling:

2 c Vanilla Yogurt

2 Tbsp Jam (Strawberry, Cherry, Blueberry... whatever sounds good to you!)

 

Instructions:

  1. Start by heating a medium-sized skillet (or two) on medium heat on the stove.

  2. Beat eggs in a medium-sized bowl with a whisk.

  3. Add pancake mix and water. Stir contents of the bowl with the whisk until smooth. (Batter should be the consistency of cream or buttermilk. Add more mix or more water to get the right consistency.)

  4. Grease the entire bottom of the skillet with vegetable oil or butter. If the oil turns dark brown within 5 seconds of adding it to the skillet, your skillet is too hot! (This might happen after you have made a few crêpes as the skillet gets hotter.)

  5. Pour the batter onto 1 side of the skillet until it covers 1/3 of the bottom of the skillet. Hold your skillet by the handle and swirl it around until the batter covers the entire bottom of the skillet evenly.

  6. Return to heat and continue cooking until the edges of the crêpe start to come up from the skillet. (About 1-3 minutes depending on skillet temperature.)

  7. Flip your crêpe with a spatula and cook until lightly browned on both sides.

  8. Remove the crêpe from the skillet and place it on a plate. (As you get more crêpes you can stack them on top of eachother to keep them warm.)

  9. Grease the pan again and repeat steps 5-8 until all your batter has been used.

  10. Mix yogurt and jam together in a small bowl.

  11. Place yogurt in a 1 inch wide heaping line all the way down the middle of your crêpe. Roll the crêpe around the yogurt and... enjoy!!



This recipe makes roughly 4 servings of 3 crêpes.
